Dinner for six....

Not too much going on lately. We are just enjoying being home for a change. My parent's came to Birmingham this weekend while in route to Anniston to check out the venue for Robert's wedding in May. We enjoyed getting to visit with them without anything else going on around us! Julie and Nick also came over on Saturday night to have dinner with all of us. The food and company were both superb! Clay grilled steaks and I made a mashed potato bake that Julie gave me the recipe for (will be shared at end of post)!!! For dessert I made a Chocolate Swirl Cheesecake....also amazing! We had a great time visiting with everyone and sharing stories of the old days in Atmore!! :)

Mashed Bake

4 cups frozen hash browns
1 (7.6-ounce) package butter and herb mashed potato mix
1 stick butter, softened
4 ounces cream cheese, softened
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups boiling water
Sprinkle of paprika

Directions:
Preheat oven to 350 degrees F.
Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Sprinkle with paprika. Bake for 35 to 45 minutes.
